A long-established one-stop shop for washoku's essential "dashi"
This establishment opened its doors in Nihonbashi in 1737, during the time of Yoshimune, the eighth Shogun. It's a long-established shop which deals in all the dried bonito, kelp and so on needed to make the dashi (stock) which is such an essential part of Japanese cuisine, as well as dried mushrooms, Koya-dofu, seaweed and other dried foods. The shelves are lined with a wide selection of goods the like of which can only be found in a specialist shop, such as furikake rice toppings and "katsuo senbei", snacks made with dried bonito from Yaizu.
