The restaurant first opened for business at Nihonbashi Fish Market in 1889, then relocated to Tsukiji Fish Market, where it has remained for more than 120 years. It is a long-established sushi restaurant which continues the traditions and techniques of Edomae sushi. The sushi chef's art shines brilliantly in typical Edomae (Tokyo-style) ingredients, with delights such as "anago" (sushi of conger eel simmered for hours until soft and puffy, in a special method called fukumeni), and "kohada" (gizzard shad, whose flavors are a delicate balance of salt and vinegar seasonings). Sitting at the counter and watching the chefs work their magic before your eyes is a treat not to be missed.
