[Shiga Funazushi]

An ancestral sushi whose history goes back to the Nara period

"Funazushi" is a local traditional dish of Shiga Prefecture which uses nigoro-buna caught in Lake Biwa. It is a fermented food with a particular aroma, and contains plenty of lactic acid bacteria, minerals and vitamins. The recipe, flavor and aroma vary from region to region, and it is fun to hunt for your favorite funazushi among the many different kinds out there. You can simply eat it sliced as is, or use it in ochazuke (rice boiled in tea). Its rather cheesy flavor goes very well with sake.
